In a medium sized bowl, whisk ½ cup of pasteurized plain whole milk Greek yogurt, ½ cup of blood orange juice, ½ teaspoon of vanilla extract, a pinchofkosher salt, and 2 tablespoons of honey. Once combined, whisk in ¼ cup of chia seeds. Cover and chill for at least 8 hours and up to 1 day.
When ready to serve, thoroughly wash 2 blood oranges (including the rind) under cool, running, drinkable water. Peel the orangesmaking sure to also remove the white pith. Cut along sides of membranes to release orange segments into a medium bowl.
Chop asmall handful of roasted and salted pistachios.
Take the chilled pudding out of the refrigerator and give it a good stir. Using two small mason jars, divide the pudding up equally and layer with ½ cup of pasteurized of whole milk Greek yogurt and orange segments. Top with the pistachios and drizzle with more honey. Eat up, Mama!
