Caulifornia Hummus

Yields

Ingredients

  • 1 C frozen riced cauliflower

  • 2 lemons

  • 1 C tahini

  • 3 T water

  • 3 cloves garlic

  • ½ t ground cumin

  • ½ t kosher salt

  • ¼ t freshly ground black pepper

Directions

  1. Thaw 1 cup frozen riced cauliflower in the microwave for 1-2 minutes.

  2. Thoroughly wash 2 lemons (including the rind) under cool, running, drinkable water.

  3. In a food processor, combine the thawed cauliflower, ½ cup freshly squeezed lemon juice, 1 cup of tahini, 3 tablespoons of water, 3 cloves of garlic, ½ teaspoon of ground cumin, ½ teaspoon of kosher salt, and ¼ teaspoon of freshly ground black pepper.

  4. Process on high until thoroughly combined and smooth. If it’s too thick, add more water until it reaches your desired consistency.

  5. Taste for salt, lemon juice, and the nutty flavor of the tahini—adjust if necessary. Eat up Mama!
