Ch-Ch-Ch-Chia Seed Pudding with Blood Oranges

Ingredients

  • ½ C pasteurized plain whole milk Greek yogurt

  • ½ C blood orange juice

  • ½ t vanilla extract

  • 1 pinch kosher salt

  • 2 T honey

  • ¼ C chia seeds

  • 2 blood oranges

  • 1 small handful salted and roasted pistachios

  • ½ C pasteurized plain whole milk Greek yogurt

Directions

  1. In a medium sized bowl, whisk ½ cup of pasteurized plain whole milk Greek yogurt, ½ cup of blood orange juice, ½ teaspoon of vanilla extract, a pinch of kosher salt, and 2 tablespoons of honey. Once combined, whisk in ¼ cup of chia seeds. Cover and chill for at least 8 hours and up to 1 day.

  2. When ready to serve, thoroughly wash 2 blood oranges  (including the rind) under cool, running, drinkable water. Peel the oranges making sure to also remove the white pith. Cut along sides of membranes to release orange segments into a medium bowl.

  3. Chop a small handful of roasted and salted pistachios.

  4. Take the chilled pudding out of the refrigerator and give it a good stir. Using two small mason jars, divide the pudding up equally and layer with ½ cup of pasteurized of whole milk Greek yogurt and orange segments. Top with the pistachios and drizzle with more honey. Eat up, Mama!
