Cheeky Peachy Grrnola

Ingredients

  • 6 C gluten-free old fashioned oats

  • 2 C whole walnuts

  • ½ C sesame seeds

  • 1 C roasted sunflower seeds

  • ½ C canola oil

  • ½ C honey

  • ½ C maple syrup

  • 2 T ground cardamom

  • 2 C dried white peaches

Directions

  1. Preheat oven to 325°F

  2. In a large bowl, combine 6 cups of gluten-free old fashioned oats, 2 cups of walnuts, ½ cup of sesame seeds, and 1 cup of roasted sunflower seeds. Set aside. 

  3. In a small saucepan on low heat, add ½ cup of canola oil, ½ cup of honey, ½ cup of maple syrup, and 2 tablespoons of ground cardamom, stirring to combine.

  4. Slowly pour heated mixture over dry ingredients and stir together.

  5. Line two baking sheets with parchment paper and evenly spread granola between both pans. 

  6. Bake for 30 minutes, stirring every 10 minutes to ensure an even bake, rotating the pan each time. 

  7. Let cool. While you wait, chop 2 cups of dried white peaches. Break cooled granola into a jar and add chopped peaches, stirring to combine. Enjoy, Mama! 

  8. Store remaining granola in an airtight container for up to 3 months.
