A Brocc’n Good Hummus

Ingredients

  • 2 C broccoli stems

  • 2 cloves garlic

  • ¼ C tahini

  • 1 lemon

  • 3 T extra-virgin olive oil

  • 1 small handful fresh basil

  • 1 small handful chives

  • 1 small handful fresh dill

  • ½ t kosher salt

Directions

  1. Thoroughly wash 2 cups of broccoli stems under cool, running, drinkable water. Peel and roughly chop.

  2. Bring a pot of salted water to a boil and prepare a large bowl for an ice bath.

  3. Boil broccoli stems for 5 minutes or until tender. Drain the broccoli and plunge the stems into the ice bath. 

  4. Drain the stems again and place them in a food processor along with 2 cloves of garlic, ¼ cup of tahini, juice of 1 lemon, 3 tablespoons of extra-virgin olive oil, a small handful of fresh basil, a small handful of chives, a small handful of fresh dill, and ½ teaspoon of kosher salt.

  5. Process the mixture until smooth, stopping to scrape down the sides if needed. Taste and adjust seasoning to your liking. Eat up, Mama!
